Chinese Fried Prawns


This is a Chinese Starter dish and is very popular. You start with one and you’ll go on munching them!


Ingredients:
1. Jumbo Prawns – 12-16
2. Ginger Garlic Paste – 1Tsp
3. Soya Sauce – 1 Tsp
4. Salt – To Taste
5. White Pepper Powder – 1 Tsp
6. Chopped/Minced Green Chillies – 4
7. Diluted White Vinegar – 1 Tbsp
8. Spring Onions – 25Gms chopped
9. Corn Flour – ½ Cup
10. Maida – ¾ Cup
11. Baking Powder – ¼ Tsp
12. Refined Oil – ¾ Cup + for deep frying
 
Method:
1. Clean wash and dry the prawns using kitchen towel. Keep the tails intact. Marinate with Vinegar, salt, ginger garlic paste, white pepper powder and Soya sauce for 20-30 Mins in the fridge.
2. Mix Maida, Corn flour, oil, baking powder, salt and pepper to taste and ¾ cup water. Whisk thoroughly till the batter is smooth and of pouring consistency. Keep aside for 20Mins.
3. Add chopped green chillies and spring onions mix the batter thoroughly, heat oil in a deep frying pan and maintain medium temperature once the oil starts fuming.
4. Hold the marinated prawns by the tail, dip in the batter and deep fry evenly till crisp and golden.

Drain on Kitchen paper and serve with hot garlic dip.
