Watermelon Rind Dosa

This is a good breakfast snack in summer when watermelon is available in abundance. Just like cucumber dosa or Thausali, Watermelon Rind Dosa has a unique flavour and taste. The white rind of watermelon is grated or coarsely ground and mixed with other dosa ingredients to get thick dosas that go well with fresh butter. This dosa is rich in fibre, protiens, minerals carbs and vitamins, at the same time low on fat.

Ingredients:
Watermelon Rind(White portion sticking to the peel) - 1 Cup grated or coarsely ground
Semolina(Bombay Rava or Broken Whole Wheat Rava) - 2 Cups
Wheat Flour - 1/2 Cup
Sugar - 1 Tsp
Salt - To taste
Grated Coconut - 1/2 Cup
Green Chillies - 2-4 minced
Ghee/Oil - For roasting



Method:
Mix all the ingredients except ghee/oil using water enough to make a thick batter.
Allow to stand for 15-20 mins.
Heat a tawa, sprinkle little ghee/oil and take handful of the batter.
Flatten and spread the batter using your fingers to 1/4 inch thick dosa.
Allow to cook on medium flame, covered with a dome lid.
When one side starts to get browned, add some more ghee/oil,
flip the dosa and roast the dosa on the other side.
Serve hot with fresh butter.

Variation: You may also add chopped onions and coriander leaves to the batter. In that case, you can reduce the quantity of grated coconut to 1/4 cup.
